Spelt Waffles with Honey and Tonka Bean

Waffles are more than a quick breakfast – when tonka bean and honey are in the batter, it becomes something unforgettable. The tonka bean adds a subtle, warm note that pairs well with the honey.

This recipe yields a batter that can be poured directly into the waffle iron – with little effort and excellent results.

Spelt Waffles with Honey and Tonka Bean

  • 300 g soft butter
  • 150 g honey
  • 150 g raw cane sugar
  • 1 small tonka bean
  • 1 pinch of salt
  • 6 eggs
  • 250 g wholemeal spelt flour
  • 250 g spelt flour type 630
  • 250 ml whole milk

Finely grate the tonka bean on a nutmeg grater. Cream the butter, eggs, honey, salt, grated tonka bean, and sugar until frothy. Then add both types of flour and the whole milk and mix everything into a smooth batter.

Pour the batter in portions into the preheated waffle iron and bake the waffles according to the appliance instructions.

Tip: There's no need for powdered sugar here – honey and tonka bean give the waffles enough character of their own.
