Nordländer – Rye Bread with Character

The Nordländer is a robust rye bread with an intense rye malt flavor and sunflower seeds. The dough can be baked free-standing or in a loaf pan – if you're working with this mix for the first time, a loaf pan is a good choice. If you wish, you can also prepare the bread in a bread maker.

For a dough from 1 kg bread premix

  • 1,000 g Nordländer bread premix
  • 20 g fresh yeast, dissolved in lukewarm water
  • 600–650 g lukewarm water (dough temperature: 26–28 °C)

Combine the bread premix and the lukewarm water with the dissolved yeast. Knead the dough for 15 minutes, then let it rest for 30 minutes.

After the resting period, form the dough pieces and place them in the loaf pan. Proofing time: 35 to 40 minutes.

Bake at 250 °C, dropping to 200 °C. Baking time: about 60 minutes for free-standing bread – loaf breads require approximately 10 minutes longer.
